    Achari Chicken Wings

    Uplift your Chicken Wings game this weekend with some earthy warm spices! This Achari Chicken Wings are filled with aromatic spices and comes together very effortlessly. To make it healthy, skip the deep frying and use the Air Fryer instead. I have also mentioned the time and temperature for oven bake.

    I am a sucker for chicken wings and can go for it more often than one can imagine.

    Of course, it is very easy to grab a frozen packet of marinated chicken wings or grab a box from the restaurants. But making it at home means you can work with the flavor and prepare it your own way.

    These Air Fryer Achari Chicken Wings are so easy to prepare, as you can see from the video. You can use store bought Achari masala, but making it home will definitely make it more flavorful.

    Ingredients for Achari Chicken Wings

    You definitely start by making the achari spices

    • Cumin Seeds
    • Fenugreek Seeds
    • Nigella Seeds
    • Cloves
    • Cinnamon Sticks
    • Black Mustard Seeds
    • Dry Red Chili powder

    These spices are typically used to prepare Indian pickles too. These spices are dry roasted for a while and then grind to powder.

    Other Ingredients required:

    Ginger Garlic and Green Chili Paste: Avoid using store bought ginger garlic paste. Use fresh ginger and garlic. I use 1 green chili, as I don't eat too spicy food. So add more if you want.

    Kashmiri Chili Powder: Kashmiri Chili powder is not spicy, but it adds a beautiful red hue to the dish. You can skip if you don't have Kashmiri chili powder

    Mustard Oil : Mustard oil has a pungent aroma to the Achari Masala. If you absolutely cannot find mustard oil, or you don't like, then go ahead with vegetable oil of your choice.

    Yogurt: Use thick Geek yogurt or Hung yogurt.

    Ghee : You can use melted butter too. Ghee is not added during marinating the chicken. I like to brush it on the chicken every 5 minutes as it cooks in the air fryer. And once done, brush ghee one more time for the rich aroma and the glaze on the Chicken wings.

    Do you need to marinate the Chicken Wings for a long time?

    I let the chicken wings marinate for about 10 to 15 minutes. But if you are in a rush, you can totally skip the wait time.

    Marinating chicken always helps the flavors to go in and season the chicken properly.

    How to prepare the Wings.

    Start by dry roasting the spices for the Achari Masala. Once done, you grind it to powder.

    In a mixing bowl, add the mustard oil along with yogurt and Kashmiri chili powder. Whisk to make a smooth consistency.

    Add the Achari masala along with ginger garlic and green chili paste and salt. Give a whisk.

    Add the chicken wings and massage it all around.

    I like to let it rest for 15 minutes, but you can start cooking right away.

    Preheat the oven to 400 F and let it cook for 25 minutes. Take out the basket every 10 minutes, turn the wings and brush a little ghee.

    Once done, brush ghee one last time and serve with the dipping sauce.

    If you choose to make it in the oven, it will take roughly 35 minutes at 400F, turning the wings when half way done.

    What dipping sauce will go best ?

    Because the wings has a lot of earthy spices, use a cool yogurt based dipping sauce would work best.

    This dipping sauce that I used is my go to for any spicy chicken or veggie dishes.

    It needs avocado, cilantro and yogurt with salt. Just blend and it's ready.

    I hope you will give this chicken wings a try and I promise you will love it! It is not overly spicy but has a lot of flavor and will totally uplift your taste bud!

    Ingredients
     

    • 1.5 lb chicken wings
    • 1 inch fresh ginger
    • 4 garlic cloves
    • 1 green chili
    • ⅓ cup thick yogurt
    • ¼ cup mustard oil
    • 1 tablespoon Kashmiri chili powder
    • Ghee to brush on Chicken Wings

    Spices

    • 1 big dry red chili
    • 1 teaspoon fenugreek seeds
    • ½ teaspoon nigella sees
    • 1 teaspoon mustard seeds
    • 1 teaspoon cumin seeds
    • 3 to 4 cloves
    • 1 cinnamon stick

    for the yogurt dip

    • 1 small avocado
    • ¼ cup yogurt
    • handful of cilantro leaves

    Instructions
     

    • Dry roast the spices mentioned and then grind to powder
    • In a mixing bowl, add the yogurt, mustard oil and Kashmiri chili powder. Give it a whisk
    • Add the Achari Spice Powder, ginger garlic and green chili paste along with salt. Give a whisk
    • Add the chicken wings and massage it all around.
    • Preheat the Air Fryer or Oven to 400 F
    • While the Air Fryer/Oven preheats, prepare the dipping sauce by blending the avocado with yogurt and cilantro leaves. Add salt to taste.
    • Once pre heated cook the chicken wings in the AIR FRYER for 20 minutes and OVEN for about 35 minutes. Take out the chicken wings every 10 minutes and brush with ghee. Remember to turn the wings halfway through.
    • Once the Achari Chicken Wings are ready, brush some ghee, squeeze lemon juice and enjoy with the dipping sauce.

    Notes

    You can prepare the same dish using Cauliflower, Paneer or Tofu. The cooking time will however change accordingly.
