    Watermelon Cooler

    Happy 4th of July America! You guys having fun ?

    We had a wonderful time 🙂

    Over the weekend, we took a short trip to Reno and Tahoe. The 4 hour drive to Reno actually took almost 6 hrs to reach. It was little tiring but couldn't really blame the traffic, after all it was a long weekend . Everybody deserved a getaway.

    We reached the hotel in Reno and after a quick shower, we both got charged up to see 'The Biggest Little City In The World'

    For me, visiting casinos is all about the bling-bling and glitters you see every where. I don't understand card games. Arvind tried to explain poker to me but I found it boring. There were some shows going on too but none of them were that interesting. So, we just hopped from casinos to casinos, walked in the street and watched a free circus show for a while.

    I guess after visiting Vegas, no other strips and no other casinos can visually appeal you that much 🙂

    Oh! there was a children section in one of the casino and I won a tiny Red Nemo in one of the game. Well, I won something!


    Next day was more fun for us as we were in Tahoe. It was not as warm as it was in Reno but it was truly a perfect Tahoe weather. We sat in the beach, which was super crowded with college kids.. enjoyed the clear water of the lake and then, we went for a 2 hr cruise. The only downside of this..I got sun burnt!! I am super tanned and the sun block which said SPF 55 didn't work much for my skin.

    Today morning, I was hoping to make a true American breakfast for us, but I was too exhausted after all the fun we had.

    So, I made a drink 😉 I think a fresh fruit drink is the best way to relax and celebrate at the same time. The tangy-ness of the lime, the heat from the jalapeno and the flavor the mint makes this a perfect drink for summer.

    Watermelon Cooler

    Ingredients
     

    • 4 cups of cubed seedless watermelon
    • 2 jalapenos (slit in half and seeds removed)
    • ½ cup chopped fresh mint leaves
    • 1 cup sugar
    • juice of 1 lime
    • zest of 2 limes
    • 1 cup water
    • 1 teaspoon salt

    Instructions
     

    • Using a blender, process the watermelon cubes until they are smooth.
    • Add jalapeno to it and leave it aside for about 30 to 40 minutes.
    • In the meantime, make the mint and lime syrup.
    • Add 1 cup water, 1 cup sugar, zest of 2 limes and mint leaves to a pan.
    • Bring to a boil and keep stirring until sugar has dissolved. This will take about 2 minutes.
    • Keep it aside and let it cool.
    • After 30 minutes, strain the watermelon mixture through a sieve into a pitcher. Discard the jalapenos.
    • Strain the syrup into the pitcher and add the lime juice to it.
    • Finally add salt and stir it well.
    • Serve it cold.

      First and second pics are soooo pretty...sigh. There's nothing to beat the heat like watermelon. I usually make it without the jalapeno, gotta try adding it next time.

      I love watermelon but never tried jalapeno and watermelon. I think it's a little too hot for my taste. I think just one would be perfect.

      Sounds like such a delicious and refreshing drink...perhaps I'll make it for a picnic this weekend. We don't get jalapenos here, but I'm sure that it will be equally good with Indian green chillies.
