    Basil seeds - Can easily be confused with chia seeds. These are high in fiber, supports digestive system and provides a cooling effect.

    Kala Namak - A pinch of salt helps to enhance the sweetness of the watermelon. You can either use the regular salt or use black salt (kala namak). Kala namak has a distinctive savory, sulfurous flavor. It adds Umami depth and a slightly smoky flavor.

    Chaat Masala - Chaat masala is a tangy, savory Indian spice blend that instantly adds a burst of flavor to fruits, snacks, salads, and drinks.

    Fresh Mint Leaves - Watermelon and mint leaves always works together beautifully. In both drinks and salad.

    Coconut water - You can make this watermelon cooler with water too but during peak summer days I prefer coconut water.

    STEP 1 - Soak Basil Seeds and Gond Katira

    Add 1 tablespoon basil seeds to 1 cup water. Let soak for 15 to 20 minutes.The seeds will swell and develop a gelatinous coating.

    Soak 1 teaspoon gond katira in 1 cup water overnight. By morning, it will expand significantly and become jelly-like or shaved ice.

    Steps to prepare

    STEP 2 – Either blend the watermelon with a few fresh mint leaves or muddle them directly in a serving glass. For an ultra-smooth and refreshing drink, blend the watermelon first and strain the juice before adding the remaining ingredients.

    STEP 3 – Add the soaked basil seeds and gond katira, followed by kala namak and chaat masala.

    Kala namak (Indian black salt) and chaat masala are popular Indian seasonings that add a tangy, savory flavor to the cooler. If you don't have them on hand, simply use regular salt and a squeeze of fresh lemon juice instead.

    STEP 4 – Fill the glass with ice cubes, then pour in coconut water for a naturally sweet and hydrating drink. You can also use regular chilled water if preferred.

    STEP 5 – Stir everything well and give it a taste. Adjust the seasoning with a little more salt if needed, then serve immediately and enjoy this cooling summer refreshment.

    Ingredients
     

    • 1 tablespoon Gond katira (Tragacanth gum)
    • 1 tablespoon Basil seeds
    • Few mint leaves
    • diced watermelon
    • ½ teaspoon Kala Namak (Indian Black Salt)
    • ½ teaspoon Chaat Masala
    • Coconut water

    Instructions
     

    • In a container stir 1 tablespoon basil seeds with 1 cup water. Cover and let it rest in the fridge for the basil seeds to swell.
    • In a seperate container add the gond katira along with 1 cup water. Cover and let it rest in the fridge for it to expand and turn into gelly like substance.
    • Next day to prepare the watermelon cooler for 1 glass, add few cubes on water in a glass and muddle it.
      Add few mint leaves and muddle.
      Next add 1 tablespoon of swelled basil seeds and 1 tablespoon of expanded gind katira, along with the ½ teaspoon chaat masala and ½ teaspoon kala namak.
    • Pour ice cubes and coconut water. Give a stir and enjoy.

      I love watermelon but never tried jalapeno and watermelon. I think it's a little too hot for my taste. I think just one would be perfect.

      Sounds like such a delicious and refreshing drink...perhaps I'll make it for a picnic this weekend. We don't get jalapenos here, but I'm sure that it will be equally good with Indian green chillies.
