    Sundried Tomato Pasta is a Mediterranean-inspired dish that features al dente pasta tossed in a rich, savory sauce made from sundried tomatoes, garlic, and extra virgin olive oil. Often complemented with ingredients like fresh basil, Parmesan cheese, and sometimes cream or chicken, this dish is versatile and can be tailored to your taste.

    Sundried tomatoes are easily available in stores but if you wish to make at home, then here is my recipe on how to make sundried tomatoes.

    Ingredients you need for Sundried Tomato Pasta

    Garlic - I like to add a lot of chopped garlic to the pasta sauce.

    Onion - Onion is optional, but I do like to add half a white onion as it adds volume to the sauce.

    Dried herbs of your choice - You can use your choice of dried herbs to the sauce. I use dried oregano.

    Sun dried tomatoes - You can choose to either finely chop the sun dried tomatoes or add as is.

    Chili flakes - Chili flakes adds a subtle heat to the sauce.

    Heavy cream - If you want to skip heavy cream, you can add some milk or lactose tolerate milk.

    Chicken bullion powder - Chicken bullion adds an umami flavor to the sauce. You can use vegetable bullion too, or just skip it. I didn't add any salt to the sauce, as the chicken bullion powder was not sodium free.

    Steps to prepare

    In a hot pan, add the butter and let it melt.

    Once it melts, add the chopped garlic and stir it around. Don't burn the garlic. Let it just soften a little.

    Next, add the onion and season with salt and pepper.

    If you are adding dried herb, add that once the onion is cooked down a little. I added dried oregano.

    Steps to prepare

    Next, add the sundried tomato. You can add as much as you want or as little to adjust your taste bud. Stir around to mix the sun dried tomato with onion.

    Pour the heavy cream and mix it around

    If you are adding chicken/veg bullion powder, you can add at this stage. If you are not adding bullion, then season with little salt.

    Finally, add the boiled pasta, grated Parmesan cheese and give it a mix. Serve warm

    • Use pasta water to adjust the consistency of the sauce.
    • Oil-packed sundried tomatoes have more flavor than dry-packed ones.
    • For a vegan version, omit Parmesan or use a dairy-free alternative.

    Ingredients
     

    • 10.4 oz pasta (2.6 oz/person)
    • 2 tablespoon butter
    • 4 Garlic cloves (Finely chopped )
    • ½ White Onion (Finely chopped )
    • ⅓ cup Sundried tomato
    • ⅓ cup Heavy cream
    • 1 tablespoon Chicken bullion
    • ¼ cup Parmesan cheese

    Instructions
     

    • Bring a pot of water to boil and season with salt. Once boiled, add the pasta and put the timer for 8 or 10 minutes, depending on what is mentioned in the packet.
    • In the meantime, prepare the sauce.
      In a heavy bottom pan, melt butter and once it melts, add the chopped garlic and stir it around for a while.
    • To the pan, now add chopped onion and stir it around. Once it softened a little, add the dried herbs if using.
    • Next, add the sundried tomatoes and stir it around to mix everything.
    • Pour the heavy cream and stir it around. If you want more gravy, adjust the amount of the heavy cream accordingly.
    • If you are using chicken or veg bullion, add it now. If you are not adding, then season with little salt.
    • By now the pasta should be boiled, save ½ cup of the pasta water in case you need to add to thin out the sauce consistency.
    • Add the boiled pasta along with grated Parmesan cheese and stir it around.
    • Serve warm and add a bit more Parmesan cheese on top.
