Sorbets are refreshing, light and a great way to cool off on a hot summer afternoon. It is also a guilt-free treat because it’s mostly fruits. This Muskmelon Thyme Sorbet is refined sugar-free, dairy-free and comes together with a quick blend. It’s so easy that you don’t even need a recipe! Having said that, there is still a key thing to remember when you make a sorbet so that it neither gets too icy nor turns into a slushy.
I probably would have never tried sorbet if not for the overload of frozen muskmelon that was in left in the freezer for almost a month. Instead of making a smoothie, I decided to try sorbet and was pleasantly surprised at how easy and instant it was.
Making Muskmelon Thyme Sorbet with fresh fruits
When you make Muskmelon Thyme sorbet with fresh fruits, you need to first blend it, add sugar syrup to it and then, either churn it or freeze it. If you don’t have an ice cream machine to churn the fruit juice, it will take a few hours for it to set in the freezer.
If you don’t have an Ice Cream Machine: Pour the juice in a mixing bowl and place the mixing bowl in the freezer. Take it out every 2 hours and whisk to mix it around. Using a stand mixer or an electric whisker will make the task easy. You have to do this a few times until the ice cream consistency looks creamy and it is set.
Make instant Sorbet using frozen melon fruits and fresh thyme leaves
For instant sorbet, definitely use frozen fruits. A quick blend of the frozen fruits with either honey or sugar syrup is all you need. For the perfect texture, leave the sorbet in the freezer for about 30 minutes.
ONE KEY THING TO REMEMBER
The most important thing to take care when making sorbet or ice cream is the amount of sweetener you add. If you add less, it would get too hard and turn into icicles. If you add too much, it will turn into slushy and won’t set.
The best way to test is by tasting the sorbet or the ice cream custard. Before you freeze, it should taste a little too sweet for your palate. As it sets and freezes up, the sweetness mellows down a lot.
Here is a cool trick you definitely want to try when making sorbet with fresh fruits.
For this Muskmelon Thyme Sorbet, I used honey instead of sugar. Honey and fresh thyme is a beautiful combination and with sweet fresh muskmelon, it tastes really good with a floral aroma.

Ingredients
- 4 cups frozen muskmelon cubes
- 1 tablespoon fresh thyme leaves
- 1 teaspoon fresh lemon juice
- ¼ cup honey
- ¼ cup water (you might need more)
Instructions
- Add everything in a blender and blend it to a smoothie like consistency. If it doesn’t blend easily, add a little water.
- You could use an ice cream machine to churn the melon puree or just pour it in a container and keep it in the freezer to set.

Honey and thyme really is a fun combination! I'm imagining that combined with the muskmelon (cantaloupe here in the States...I think), and it sounds wonderful.
