Onion Tomato and Green Chili - These veggies provide the base, sautéed in hot oil until they’re soft and fragrant.
Spices - Whole spices like cumin seeds, black mustard seeds along with fennel seeds, Turmeric, chili powder, and garam masala come together to give the dish its signature punch of heat and warmth.
Coriander and Lemon juice - Fresh coriander adds a burst of color and freshness, while a squeeze of lemon brightens up the dish and cuts through the richness.

Here are the steps for Hasselback Egg Fry
1- Start by boiling the eggs for 8 minutes for hard-boiled. Add a few drops of vinegar or lemon juice, so the peel comes off easily.
2- Once the eggs are boiled and peeled, slice it half the way using an egg slicer. This step is optional, you can also just slice the egg in half or leave it full by scoring it a little, so the flavor goes in.
3- In a pan add oil and once it heats up, add the whole spices along with turmeric and chili powder. Stir it around to cook for 1 minute.
4- Add the onion, season with salt and once it's softened a little add the tomatoes. Cook the onion and tomatoes until both are softened.
5- Add garam masala and cook the spices for 1 minute.
6- Add the boiled eggs and toss it around for a minute or 2.
7- Add a good amount of finely chopped fresh cilantro leaves and toss it around. Check for salt and add more if needed.
8- Finish it with lemon juice and serve warm.

- 1 Small Onion (Thinly sliced)
- 1 Small Tomato (Thinly sliced)
- Finely chopped cilantro leaves (to add at the end)
- Fresh lemon juice (to add at the end)
- 1 tablespoon oil
- Salt to taste

- ¼ Tsp Fennel seeds
- ¼ Tsp Black mustard seeds
- ½ teaspoon Cumin seeds
- ¼ teaspoon Turmeric powder
- ¼ teaspoon Chili powder
- 1 teaspoon Garam masala powder
Instructions
- Boil the egg for 8 minutes. Add a little bit of lemon juice or vinegar, as it helps the peel to come off easily.
- Once the oil is boiled, drain the water and add cold water with some ice cubes to cool it down quickly. Peel it off and keep aside.
- Take an egg slicer and slice the boiled eggs just halfway through.
- Heat a heavy bottom skillet and add the oil. Once the oil heats up, add the whole spices along with turmeric powder and chili powder. Toss it around for 1 minute.
- Scatter the sliced onion, season with salt and cook for 1 minute. Then add the sliced tomatoes and cook both the onion and tomato for 3 minutes or until it looks soft.
- Sprinkle garam masala and cook for 1 minute.
- Add the hasselback egg fry and toss it around for a few minutes for the egg to soak it all the flavor.
- Finish it with a good doze of finely chopped cilantro leaves and squeeze of lemon juice.
