This Chia Pudding is made with homemade Badam Doodh (Almond flavored dairy milk). It has the flavor of almond, cardamoms and saffron. It’s amazing just on it own but then we like to top it with some fruits and granola to make it a filling breakfast. A rich and a luscious way to start the day!
Chia Pudding is a healthy breakfast choice which is not only super easy to put together. It’s something that can be done in advance. Chia seeds doesn’t have any flavor but works as a great blank canvas to incorporate your choice of flavor.
What is a GOOD RATIO for Chia Pudding?
For a perfectly thick chia pudding consistency you would need 3 tablespoons chia pudding to 1cup milk.
I personally don’t always like it too thick and so change it up based on how I want it. For this particular recipe, I kept the consistency thin, a bit runny too.
What is BADAM DOODH?
Badam Doodh is a special Indian drink prepared by simmering almond paste in milk along with saffron and cardamom for flavor and color. It can be enjoyed warm or cold. Here is a link to the recipe of Badam Doodh!

How to make Badam Doodh Chia Pudding?
FIRST : Prepare the Badam Doodh (Click here for the recipe)
SECOND : Mix chia seeds to Badam Doodh.
THIRD : Keep it in the refrigerator to thicken up
Serve with some fresh fruits and few-sliced almond. I also added little granola to make it more filling.
Prepare in ADVANCE
Make a big batch and add fresh fruits of your choice before serving. Or add some crunch by adding granola. Or just sprinkle some slivered almond and enjoy it as is. It’s delicious and you will love the richness of the chia pudding you get from Badam Doodh.

Ingredients
- 2 cups badam doodh (Recipe Link in NOTES BELOW)
- 4 tablepsoons chia seeds
- toppings:
- fresh fruits
- granola
- slivered almonds
Instructions
- Pour the milk in a big container and stir the chia seeds.
Cover the container and let it rest for few hours or over night in the
refrigerator. - Divide the chia pudding in individual serving bowls and top
it with fresh fruits, some granola and slivered almonds. - Enjoy cold or room temperature.

I've never had anything even remotely like this. I just can't imagine what it's like, but I would love to try it! Badam Doodh sounds like someplace right out of the Lord of the Rings! So intreguing!
