    Fennel Roasted Strawberries Yogurt

    This fennel roasted strawberries yogurt is not only creamy nice cream but also super flavorful from the addition of fennel seeds. This creamy dessert comes together with very minimal effort and needs only 4 ingredients!

    Roasted Fennel Strawberry Yogurt

    Roasting fruit always brings out the flavor; it’s more perfumed and robust. And when you throw in some earthy spices or fresh herbs, it takes the fruit to a whole new level of flavor fiesta!

    Let me warn you, that roasted strawberries with fennel seeds smell divine, and it will be extremely difficult to resist. But save some to enjoy it slowly after you make the delicious strawberry yogurt.

    I made a small batch but occasionally when I make a very big batch, I do an extra step of adding the mixture to an ice cream machine and churn it to give that cold ice cream texture.

    Ingredients for fennel roasted strawberries yogurt

    Yogurt - I use plain Greek yogurt and for the extra creamy texture, I like to strain the yogurt to remove the excess water.

    Fennel seeds - Fennel works amazing with fruits and vegetable when it's roasted together. It has a sweet perfumy flavor with subtle earthy taste. We use fennel seeds a lot in both sweet and savory dish.

    Strawberries - Fresh, good quality strawberries are the best for this dish. I haven't tried it with frozen strawberries, but if you do, then please do let me know how it worked out.

    Sugar or Honey - I sometime use sugar and sometimes I add honey. Honey will definitely add its own floral flavor that will go very nice with fennel.

    Steps to prepare Fennel Roasted Strawberries Yogurt

    Steps to prepare

    1- Place the yogurt in a muslin cloth and squeeze the excess water out.

    2- Then twist the edges and place on a colander on a bowl with a heavy utensil on top. Place in the fridge for a few hours to release more moisture and make it extra creamy.

    3- Layer the cut strawberries in a pan. Preheat oven to 400F. Sprinkle a little sugar and fennel seeds on the strawberries and let it roast for 15 to 20 minutes.

    4- Let the roasted strawberries cool down completely.

    Steps to prepare

    5- After a few hours, once the roasted strawberries are cooled down, blend the roasted strawberries.

    6- Add sugar or honey, based on your choice.

    7- Take out the yogurt from the fridge. Remove for the muslin cloth and add it to the blender. Blend until it's all combined and smooth.

    8- Pour it in a little jar and serve or save it in the fridge to enjoy later.

    Ingredients
     

    • ½ lb Strawberries (cut in half or quarter)
    • 1 tablespoon Fennel seeds
    • ⅓ Cup Sugar
    • 2 Cups Greek yogurt (I used chobani)

    Instructions
     

    • Place a muslin cloth over a colander and place the colander on a bowl. Layer a muslin cloth and add the yogurt. Bring the edges of the cloth together and gently squeeze the excess moisture. Place the squeeze cloth on the colander and keep heavy utensil on top to release more moisture. Place in the fridge for few hours.
    • In a baking pan, add strawberries, with little sugar and fennel seeds. Let it bake at 350 for 30 minutes. Allow it to cool completely and then blend it to a purée.
    • Once the yogurt is ready, add that to the blender along with the roasted strawberry purée and sugar. Blend until it's all combined and looks very creamy smooth.
    • At this stage, it is ready to serve, or you can pour it in a container and let it rest in the refrigerator.

      I have been obsessing over the combination of strawberry + fennel ever since a recent trip to my friends' juice cart, where they had a strawberry-rhubarb juice on the menu and fennel in the list of optional add-ons. When I asked about the fennel, they told me that they actually didn't have any fennel yet this season, since it was still in the baby stages (and they can't get much juice from those). This is taking that obsession to a new level. (Because, let's be real, I'd rather eat frozen yogurt than drink a juice!) The color of the frozen yogurt is absolutely gorgeous, and the photos are stunning! (:
