Semolina waffle is a quick and easy dish that you can make for breakfast, snack, and it makes a great choice for Kid lunch box too. The batter can be made the previous night and next day morning, the waffle can be whipped up in less than 5 minutes.
Packing a lunch box that your child will actually eat can be a daily challenge. My son always prefers lunch boxes that he can pick and eat without too much fuss. Sandwiches, waffles, mini pancakes, wraps are my go-to choices. And thankfully he finishes most of it.
Semolina waffle is something I started to pack this school year, and he is enjoying it so far.
Semolina waffle is the fun twist to Indian Rava Idli
Rava Idli is a very popular Instant breakfast in South Indian cuisine. It doesn't need fermentation and the Idli comes house fluffy and soft.
And to give it a fun twist, Moms started converting these Idli to cute little waffles.
And when you have one of those mini waffle maker, it gets done quick and effortlessly. I can't deny the fact that I prefer the Belgian style crispy waffles, but for a lunch box that will not stay crispy, I don't bother to bring that out. The mini waffle maker does the job perfectly fine.
Ingredients for Semolina Waffle
Semolina - I used fine semolina, which is known as rava in hindi. Semolina is a coarse flour made from durum wheat, a hard type of wheat that’s high in protein and gluten.
All-purpose flour/whole wheat flour - You need a small about of the flour to bind the semolina so the waffle shapes neatly.
Yogurt - You want thick plain yogurt as it helps to bind together everything and adds that refreshing tangy taste.
Vegetables - You can keep the waffle plain or add some vegetables to make it more filling and nutritious. I added grated carrots, corn and finely chopped cilantro leaves. Along with that, I also added chopped curry leaves for flavor.
Baking Soda - Baking soda will help to rise the waffle, making it fluffy and soft. It also helps to get the golden brown color of the waffle.
Salt and sugar for seasoning. And I didn't add any green chili or chili flakes, as my son cannot eat spicy food. So adjust the heat based on the taste bud.
Steps to prepare
1- In a mixing bowl add the semolina and flour.
2- Add yogurt and little water, along with salt and sugar.
3- Whisk to make the batter. The consistency of the dough should be like pancake/dosa batter. At this stage, let the batter rest for 15 minutes for the semolina to absorb all the liquid.
4-Add the vegetables and mix it well. If the consistency looks too thick, add a little water.
5- Rub a little butter on the waffle maker and let it preheat for a couple of minutes.
6- In the meantime, add cumin seeds (optional) and baking soda. Whisk again to incorporate everything.
7- Ladle about ¼ cup of the batter and let it cook for about 4 minutes.
8- The waffle should come out golden brown on both the sides.
Please note that the texture of this semolina waffle will not be very crispy. If you want the texture to be very crispy, then add corn flour to the mixture.
I personally don't care for crispy texture because I am packing these for lunch box and these will anyway turn soggy by lunchtime. It will still taste amazing, for sure.
My son love these waffles and the batter can be made in advance in stored in the fridge for few days.

- ¾ Cup Fine Semolina
- ¼ Cup Yogurt
- 2 tablespoon All-purpose flour or wheat flour
- ½ Carrot (grated)
- ¼ cup Frozen or fresh corn
- 1 Shallot (Finely chopped )
- Few Curry leaves
- ½ teaspoon Salt
- ½ teaspoon Sugar
- ¼ teaspoon Cumin seeds
- 1 teaspoon Baking Soda
- Oil or butter to make the waffle
Instructions
- In a mixing bowl, add the semolina to a bowl along with flour and yogurt, salt & sugar. Add water little by little to make a smooth batter.
- Cover and leave aside for 15 minutes. This will allow the semolina to soften as it absorbs the water.
- After 15 minutes, preheat the waffle maker
- In the meantime, add the grated carrots, corn, chopped shallots and chipped curry leaves. Mix it around.
- Add cumin seeds and baking soda and mix one more time.
- Rub a little butter on oil on the waffle maker and pour ¼ cup of the batter. Close the lid and let it cook for about 4 minutes.
- Once done, place the waffles on a wire rack to cool down.
- Enjoy with the ketchup or chutney on the side
