Semolina Waffle

Semolina waffle is a quick and easy dish that you can make for breakfast, snack, and it makes a great choice for Kid lunch box too. The batter can be made the previous night and next day morning, the waffle can be whipped up in less than 5 minutes.

Ingredients
 

  • ¾ Cup Fine Semolina
  • ¼ Cup Yogurt
  • 2 tablespoon All-purpose flour or wheat flour
  • ½ Carrot (grated)
  • ¼ cup Frozen or fresh corn
  • 1 Shallot (Finely chopped )
  • Few Curry leaves
  • ½ teaspoon Salt
  • ½ teaspoon Sugar
  • ¼ teaspoon Cumin seeds
  • 1 teaspoon Baking Soda
  • Oil or butter to make the waffle

Instructions
 

  • In a mixing bowl, add the semolina to a bowl along with flour and yogurt, salt & sugar. Add water little by little to make a smooth batter.
  • Cover and leave aside for 15 minutes. This will allow the semolina to soften as it absorbs the water.
  • After 15 minutes, preheat the waffle maker
  • In the meantime, add the grated carrots, corn, chopped shallots and chipped curry leaves. Mix it around.
  • Add cumin seeds and baking soda and mix one more time.
  • Rub a little butter on oil on the waffle maker and pour ¼ cup of the batter. Close the lid and let it cook for about 4 minutes.
  • Once done, place the waffles on a wire rack to cool down.
  • Enjoy with the ketchup or chutney on the side
