    Lobia is the Hindi name commonly used for black-eyed peas, also known as black-eyed beans. They are small cream-colored beans with a distinctive black spot and are widely used in Indian cooking.

    Lobia has a mild, slightly earthy flavor that makes it an excellent base for curries. Like other beans and legumes, it is also a convenient way to add plant-based protein and fiber to your meals.

    In North Indian-style cooking, lobia is often prepared as a spiced curry with onions, tomatoes, ginger, garlic, and aromatic spices. This yogurt-based version has a wonderfully balanced combination of spicy, tangy, savory, and creamy flavors.

    Spices - The dish doesn't call for any exotic spices. It needs the regular, everyday use Indian spices like cumin, coriander, chili powder, turmeric powder and fennel powder.

    Yogurt - For a creamy texture and mild tart taste, I like to add whisked thick yogurt to the curry. It balances beautifully with the spices.

    Fresh cilantro leaves - Although optional, I will recomend you sprinkle some at the end of cooking so you get that refreshing aroma.


    How to Make Lobia Sabzi

    Steps to prepare

    1 - Soak the black eye peas over night and then boil it using a pressure cooker.

    2 - In a hot heavy bottom pan, pour oil and scatter the cumin seeds. Let it sizzle for few seconds. Add the chopped onion along with salt and stir it around to cook the onion for 3 minutes. Then add all the ground spices and toss it around.

    3 - Add the chopped tomato and mix it around to incorporate everything. Cook the onion, tomato and spices until the raw flavor is gone and the texture looks jammy.

    4 - To the pan now add the boiled black eye peas and give a mix. Cover the pan and let it cook for 5 minutes.

    5- Add the whisked yogurt and mix it around. Taste for salt and add more if needed.

    6 - Finish it wit finely chopped cilantro leaves and enjoy the curry warm with either rice or your choice of bread.


    How to Prevent Yogurt from Curdling

    Adding yogurt to a hot curry can sometimes cause it to separate. A few simple techniques can help you achieve a smooth, creamy gravy.

    • Use room-temperature yogurt instead of yogurt straight from the refrigerator.
    • Whisk the yogurt thoroughly before adding it.
    • Lower the heat before incorporating the yogurt.
    • Add the yogurt gradually rather than all at once.
    • Stir continuously while adding it.
    • Avoid bringing the curry to a vigorous boil after adding yogurt.

    For the smoothest result, you can also mix a spoonful of the warm curry gravy into the whisked yogurt first. Then slowly add the yogurt mixture back into the pan.

    • 1.5 cups Black Eye Peas (Lobia)
    • 1 Red Onion (About 6 oz)
    • 1 Tomato (About 6 oz)
    • 2 Garlic clove
    • 2 tablespoon Finely chopped cilantro leaves
    • ⅓ cup Thick Yogurt

    Spices

    • ¼ teaspoon Cumin powder
    • ¼ teaspoon Coriander powder
    • ¼ teaspoon Fennel powder
    • ¼ teaspoon Turmeric powder
    • ¼ teaspoon Chili powder
    • 1 teaspoon Cumin seeds

    Instructions
     

    • Soak the black eye peas over night and then boil it in pressure cooker. Don't over cook as you want it to hold the shape.
    • Heat a heavy bottom pan, and once it is hot, pour oil followed by 1 tablespoon cumin seeds. Let it sizzle and release aroma for few seconds.
    • Add the chopped onion and garlic. Season with salt and let it softened for 2 minutes.
    • Add the ground spices and toss it around. Then add the chopped tomato and toss it around. Sprinkle little water and let it cook for 3 minutes for the onion tomato to softened and the raw aroma of the spices is gone.
    • Add the boiled black eye peas and toss it around. Taste for salt and add more if needed. Cover and let it simmer for 5 minutes.
    • After 5 minutes, add whisked yogurt and finely chopped cilantro leaves.
    • Serve lobia sabzi with rice or your choice of bread.
