Lobia sabzi - High Protein Indian Vegetarian Dish

- 1.5 cups Black Eye Peas (Lobia)
- 1 Red Onion (About 6 oz)
- 1 Tomato (About 6 oz)
- 2 Garlic clove
- 2 tablespoon Finely chopped cilantro leaves
- ⅓ cup Thick Yogurt
Spices
- ¼ teaspoon Cumin powder
- ¼ teaspoon Coriander powder
- ¼ teaspoon Fennel powder
- ¼ teaspoon Turmeric powder
- ¼ teaspoon Chili powder
- 1 teaspoon Cumin seeds
Soak the black eye peas over night and then boil it in pressure cooker. Don't over cook as you want it to hold the shape.
Heat a heavy bottom pan, and once it is hot, pour oil followed by 1 tablespoon cumin seeds. Let it sizzle and release aroma for few seconds.
Add the chopped onion and garlic. Season with salt and let it softened for 2 minutes.
Add the ground spices and toss it around. Then add the chopped tomato and toss it around. Sprinkle little water and let it cook for 3 minutes for the onion tomato to softened and the raw aroma of the spices is gone.
Add the boiled black eye peas and toss it around. Taste for salt and add more if needed. Cover and let it simmer for 5 minutes.
After 5 minutes, add whisked yogurt and finely chopped cilantro leaves.
Serve lobia sabzi with rice or your choice of bread.
