    Zucchini Fritters

    Zucchini Fritters are one of the quickest snacks to bring together. Few everyday ingredients mixed together with grated zucchini and then pan fried until it’s golden crispy outside. Enjoy it as snack or as a meal with some salad on the side.

    Yesterday we had a beautiful sunny day and it was perfect to sit outside and enjoy these warm zucchini fritters.

    The left-over zucchini fritters, I paired the next day with khichdi. May sound like a weird combination but we liked it. You should totally give it a try.

    Ingredients for Zucchini Fritters:

    • Zucchini
    • Eggs
    • Flour
    • Corn flour
    • Spices (optional)
    • Salt

    Mixing the Ingredients: Make the fritters as soon you mix all the ingredients. Allowing the mixture to rest with release water from the zucchini there by making it soggy.

    Pan fried: These zucchini fritters are NOT deep fried, these are pan fried with very minimal oil. Fry in medium heat so it gets cooked through evenly. Cooking in high heat will make it golden brown outside but the inside will stay soggy.

    How to make zucchini fritters crispy: I like adding corn flour. You can add semolina or bread crumbs to the mixture too.

    Reheating the fritters: The left over zucchini fritters, I reheated in the oven at 350 F for 10 minutes. Avoid reheating in the microwave as it will warm the fritters but the crunchy texture will not be there.

    Spices: Zucchini on it’s own doesn’t have a lot of flavor. So I like to add some spices. You can choose your choice of dried herbs too. A little heat from chili flakes or paprika will be nice but my son can’t handle spicy food, so I didn’t add any.

    Spices I used:

    • Cumin powder
    • Fennel powder
    • Raw mango powder
    • Garlic powder

    Irrespective of what spices you use this will turn out amazing if you just follow the guideline to pan fry it properly. We like it with sour cream dip with some pickled red onion. Wash it down with your choice of drinks.

    Ingredients
     

    • Zucchinis - 2
    • Egg - 1
    • All purpose flour - ½ cup
    • Corn flour - ¼ cup
    • Salt - 1 teaspoon
    • Cumin powder - 1 teaspoon
    • Fennel powder - ½ teaspoon
    • Raw mango powder - 1 teaspoon
    • Oil for frying the zucchini fritters

    Instructions
     

    • Grate the zucchini and put it in a bowl. Add rest of the ingredients except the oil. Give it a mix.
    • Place a skillet in medium heat and pour little oil and spread it around.
    • Scoop about 2 tablespoons amount of the mixture and put it on the medium hot skillet. Press it a little bit to flatten the top.
    • Let it cook for 5 minutes in medium heat, do not move around or flip. After 5 minutes, flip and cook for 4 minutes on the other side. Keep in mind that depending on the size of the fritter, the time of cooking will also change.
    • Serve it warm.
