Ingredients
 

  • 1 Zucchinis
  • 1 Egg
  • cup Almond flour
  • cup Corn flour
  • 1 teaspoon Salt
  • ½ teaspoon Cumin powder
  • ½ Tsp Raw mango powder
  • Oil for frying the zucchini fritters

Instructions
 

  • Wash and grate the zucchini using the large side of a box grater. Add a little salt and let it sit for about 10 minutes.
    Zucchini naturally contains a lot of water, and this step helps draw out the moisture. Place the grated zucchini in a clean kitchen towel and squeeze firmly to remove as much liquid as possible.
    This simple step makes a big difference and helps create crispy zucchini fritters instead of soggy ones.
  • In a large bowl, combine the squeezed zucchini with eggs, flour, corn flour, and your choice of spices
  • Mix everything until combined. The mixture should be thick enough to hold together when spooned onto a pan. If the zucchini still releases some moisture, add a little more flour.
  • Serve it warHeat a skillet or nonstick pan over medium heat. Add a little oil and spoon portions of the zucchini mixture onto the pan.
  • Flatten gently into small patties and cook for a few minutes on each side until golden brown and crispy.
    Avoid overcrowding the pan, as this can lower the temperature and prevent the fritters from becoming crisp.
  • Transfer the cooked zucchini fritters to a plate lined with paper towels to absorb any excess oil.
    Serve warm with your favorite dip, sauce, or side dish.
