For this recipe, I prefer to first cook the soya chunks in water and then drain and squeeze them well before adding them to the curry. This removes excess water and allows the chunks to absorb more of the flavorful gravy.
Ingredients for Soya Chunk Curry
Soya chunks: Use your favorite brand of dried soya chunks. Small or medium-sized chunks work particularly well for curry.
Ginger and garlic: Fresh ginger and garlic add warmth and depth. Freshly minced or crushed ginger and garlic will give the best flavor.
Onion: Finely chopped onion creates the base of the curry and adds sweetness and body to the gravy.
Tomatoes: Tomatoes provide acidity and help create the base of the gravy. Use ripe tomatoes for the best flavor.
Spices: This a very minimal spiced everyday curry. I used cumin seeds in the bgining to temper the oil, and then made a spice paste with turmeric powder, chili powder, cumin powder and coriander powder. And finished the dish with little bit of garam masala powder.
Cilantro: Fresh cilantro is optional but makes a lovely finishing garnish.
How to Make Soya Chunk Curry

1 - Add the dry soya chunks to a bowl, sprinkle salt and pour hot water to hydrate the soya chunks.
2 - In a pan or a wok, heat oil and add the cumin seeds. Let it sizzle for couple seconds. Then add finely chopped onion, season with salt and cook the onion, until it's softened.
3- Make the spice paste by adding all the dry spices and pour little water to mix it around.
4- Pour the spice paste to the onion and stir it around. Let the spice cook for 3 minutes for the raw aroma to go away.

5- Add the chopped tomato and stir around to cook the tomatoes for about 2 minutes.
6- Scatter the hydrated soya chunks and toss it around to mix everything.
7- Pour hot water and let it simmer for 5 minutes for the soya chunks to absorb all the flavor. At this stage also check for salt and add more if needed.
8- Finish the soya chunk curry with garam masala powder and finely chopped cilantro leaves.
How to Get Flavorful Soya Chunks
The biggest trick to making good soya chunk curry is preparing the chunks properly.
After cooking the soya chunks, squeeze them really well. They act like little sponges, so if they are holding too much water, they will not absorb as much of the curry gravy.
Once squeezed, add them directly to the cooked masala and let them sauté for a few minutes before adding the water.
This allows the spices to coat the soya chunks and gives them much more flavor.
How Spicy Is This Curry?
This is designed to be a mild soya chunk curry for everyday purpose.
The combination of cumin, coriander, turmeric, Kashmiri chili powder, and garam masala provides plenty of flavor without making the curry particularly hot.
If you prefer a spicier curry, you can increase the chili powder or add a finely chopped green chili along with the ginger and garlic.

Ingredients
- 2 cups 3.90 oz/ 111 g soya chunks
- 1 tablespoon oil
- ½ teaspoon cumin seeds
- 1 medium size red onion (5.65 oz/ 161 g, finely chopped)
- 1 small tomato (chopped )
- 1 ½ teaspoon salt
Spices
- ¼ tablespoon turmeric powder
- ¼ tablespoon chili powder
- ½ tablespoon cumin powder
- ½ tablespoon coriander powder
- 1 teaspoon garam masala powder
Instructions
- In a bowl, add the soya chunks. Add salt and hot water. Leave it covered for 10 minutes for the soya chunks to hydrate and puff up.
- Place a heavy bottom pan on medium heat and heat 1 tablespoon oil.
- Once the oil heats up, drop the cumin seeds and let it sizzle for a few seconds.
- Scatter the finely chopped onion and sprinkle ½ teaspoon salt. Let the onion cook for 2 minutes for it to softened.
- Make a spice paste by mixing cumin powder, coriander powder, chili powder and turmeric powder along with little water. Pour the spice paste to the pan and stir it around. Let the spices cook for 2 minutes.
- Add the chopped tomato and continue cooking for 2 more minutes.
- Squeeze the water out of the hydrated soya chunks and add that to the pan. Stir it around to mix everything evely.
- Pour hot water and let it simmer for 5 to 7 minutes. Taste salt at this stage and add more if needed.
- Sprinkle garam masala and add the chopped cilantro leaves. Let it cook for another 2 minutes and Soya Chunk Curry is ready to serve.
