Soya Chunks Curry

This easy Soya Chunk Curry is a hearty, flavorful Indian vegetarian curry made with protein-rich soya chunks simmered in a mildly spiced onion, ginger, garlic, and tomato gravy. Finished with a sprinkle of garam masala, this comforting curry is perfect for a weeknight dinner and pairs beautifully with steamed rice, jeera rice, roti, naan, or paratha.

Ingredients
 

  • 2 cups 3.90 oz/ 111 g soya chunks
  • 1 tablespoon oil
  • ½ teaspoon cumin seeds
  • 1 medium size red onion (5.65 oz/ 161 g, finely chopped)
  • 1 small tomato (chopped )
  • 1 ½ teaspoon salt

Spices

  • ¼ tablespoon turmeric powder
  • ¼ tablespoon chili powder
  • ½ tablespoon cumin powder
  • ½ tablespoon coriander powder
  • 1 teaspoon garam masala powder

Instructions
 

  • In a bowl, add the soya chunks. Add salt and hot water. Leave it covered for 10 minutes for the soya chunks to hydrate and puff up.
  • Place a heavy bottom pan on medium heat and heat 1 tablespoon oil.
  • Once the oil heats up, drop the cumin seeds and let it sizzle for a few seconds.
  • Scatter the finely chopped onion and sprinkle ½ teaspoon salt. Let the onion cook for 2 minutes for it to softened.
  • Make a spice paste by mixing cumin powder, coriander powder, chili powder and turmeric powder along with little water. Pour the spice paste to the pan and stir it around. Let the spices cook for 2 minutes.
  • Add the chopped tomato and continue cooking for 2 more minutes.
  • Squeeze the water out of the hydrated soya chunks and add that to the pan. Stir it around to mix everything evely.
  • Pour hot water and let it simmer for 5 to 7 minutes. Taste salt at this stage and add more if needed.
  • Sprinkle garam masala and add the chopped cilantro leaves. Let it cook for another 2 minutes and Soya Chunk Curry is ready to serve.

Notes

The cooking time will change if you have to make the curry paste while preparing this dish.
