Banana Granola Muffins
These are healthy breakfast muffins where I used the left over tidbits of my homemade granola. Here is a recipe of my Super Simple Granola with Fruit and Nut
The granola adds a lovely crunch to the muffins. You can add muselli or oatmeal too.
Simulatenously, you can discard all that and just stick to all purpose flour and add some nuts or berries to the muffins.
This is a simple anyday breakfast muffins that are so good for odd hour hunger pang too.

Steps to prepare these healthy breakfast banana muffins are super simple. Just mix everything in one bowl and it's ready to be scooped in muffin pan and bake.
Can you make these muffins eggless?
Yes!
To make it eggless, ignore the milk that goes in the batter and obviously eggs. Instead prepare the batter with ½ cup plain yogurt mixed with mashed bananas and rest of the ingredients.
The recipe makes exactly 12 muffins!

The recipe is fairly simple and you could play around with it. Add your version of granola, substitute walnut with your favorite nuts or no nuts.
The recipe doesn’t call for any special gadgets, not even a whisk and it requires no sifting of ingredients. Just drop everything and mix to form a smooth batter.
A perfect pick me up treat for breakfast, teatime or after school snack.

Banana Granola Toasted Walnut Breakfast Muffins
Ingredients
- 1 ripe banana
- 2 eggs
- ½ cup sugar
- ¾ cup vegetable oil
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup toasted/plain walnuts (roughly chopped)
- ½ cup granola
- zest of 1 lemon
- juice of half lemon
- ⅓ cup milk
Instructions
- Preheat the oven to 350 F / 170 C and line a muffin tin with liners.
- In a bowl, mash the banana using a fork. Drop the eggs and whisk. Add all other ingredients except for granola and nuts. Whisk everything to form a smooth batter.
- Then, add half the granola, half the nuts and give it a mix.
- Spoon the batter evenly into the liners. Keep in mind that the muffins do rise a little.
- Top it with some more granola and toasted walnuts.
- Bake it for 20 mins.
