Banana Granola Toasted Walnut Breakfast Muffins

Banana Granola Muffins are a great pick me up breakfast! Goodness of banana with the crunch from granola, these muffins are filling and a great way to start the day. The recipe is easy and needs just one bowl and a fork to make the batter.

- 1 ripe banana
- 2 eggs
- ½ cup sugar
- ¾ cup vegetable oil
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup toasted/plain walnuts (roughly chopped)
- ½ cup granola
- zest of 1 lemon
- juice of half lemon
- ⅓ cup milk
Preheat the oven to 350 F / 170 C and line a muffin tin with liners.
In a bowl, mash the banana using a fork. Drop the eggs and whisk. Add all other ingredients except for granola and nuts. Whisk everything to form a smooth batter.
Then, add half the granola, half the nuts and give it a mix.
Spoon the batter evenly into the liners. Keep in mind that the muffins do rise a little.
Top it with some more granola and toasted walnuts.
Bake it for 20 mins.
