This high protein pasta salad is colorful, hearty, fresh, and so refreshing. Made with protein pasta, crispy roasted chickpeas, roasted zucchini, sweet peppers, fresh basil, and a warm garlic lemon dressing, it is the kind of pasta salad that works just as well for lunch as it does for a summer dinner.

And if you want to turn it into a complete, protein-rich meal, serve it alongside pan-fried salmon marinated with lemon juice, chili oil, and garlic.
What makes this pasta salad especially delicious is the contrast of textures. The pasta is hearty and chewy, the roasted chickpeas add a little crunch, the zucchini and sweet peppers become caramelized around the edges, and fresh basil brings everything together. The warm dressing is made with olive oil, thin slices of lemon peel, garlic, banana peppers, and cherry tomatoes, giving the salad a bright, savory, slightly spicy flavor.
It is colorful enough for a dinner table, filling enough for meal prep, and easy enough to make on a busy weekday.

Tips for Making the Best High Protein Pasta Salad
Do not overcook the pasta
Protein pasta can become soft quickly, so keep an eye on it while cooking. Al dente pasta holds its texture much better in a pasta salad.
Dry the chickpeas well
This is one of the easiest ways to get better roasted chickpeas. Removing excess moisture allows them to brown and crisp more effectively.
Do not overcrowd the roasting pan
Give the vegetables and chickpeas enough room. If they are packed too closely together, they will steam instead of roast.
Use fresh lemon
Fresh lemon juice and lemon peel give this dressing a much brighter flavor than bottled lemon juice.
Cook the garlic gently
Garlic can go from fragrant to bitter very quickly. Keep the heat moderate and watch it closely.
Add fresh basil at the end
Fresh basil is delicate. Adding it just before serving preserves its aroma and fresh flavor.
Make it your own
You can easily add feta cheese, olives, cucumber, arugula, spinach, avocado, or toasted nuts.

What Other Protein Can I Add?
Salmon is an excellent choice because its rich flavor balances the bright lemony pasta salad.
Other good options include:
- Grilled chicken
- Shrimp
- Tuna
- Grilled tofu
- Hard-boiled eggs
- White beans
- Extra chickpeas
- Feta cheese
If your main goal is to increase protein, check the nutrition label of your pasta because protein content can vary significantly between brands.
