Most of you will definitely fall off from your chair when I say this: I never had Tortilla Soup! And it gets even worse.. I only heard of this soup about a week back... In my defense, the only thing I can say is that, in India, it's not a common dish. Yeah.. yeah, there are many more such dishes which are not common in India, but I still tried them. How could I miss this ? I had Tortilla chips, Tortilla Wrap, Tortilla Pizza, but never thought you could dip it in soup too!
Whatever the case, the main point is that I finally discovered it 🙂 Thanks to my Blog hopping addiction, I came across an event which is hosted by Girlichef where she is in a quest to explore more options or variations of Tortilla Soup. So, I started my research on the soup, what is different or special about it? I really couldn't find much except that it's probably originated from Mexico and is usually made with tomato as the base ingredient. I might be wrong out here !! I even watched the movie 'Tortilla Soup' and enjoyed it completely.. a simple happy family movie, however I couldn't understand why is the movie called Tortilla Soup? Did I miss something, some in-depth meaning which was too difficult for my tiny brain to absorb?! 😛
Phew! Enough... Why was I even trying to learn so much on this? Just cook, eat, and enjoy. Does the ingredients and directions I used, fits the criteria? I don't know! We just enjoyed the crunchy bite in every spoon of that soup.

Spaghetti Tortilla Soup
Ingredients
- 1 wheat tortilla (cut in 1 inch cube size)
- ½ pound spaghetti broken in half
- 2 carrots cut in 1 inch cube size
- 1 medium onion finely chopped
- 3 cloves garlic finely chopped
- 1 cup frozen peas
- 1 medium tomato finely chopped
- 2 cup chicken broth
- ½ cup cream
- 1 cup grated cheese (i used pepper jack)
- 1 tbs chilly flakes
- 1 tbs lemon juice
- salt and pepper
- 2 tbs oil (i used olive oil)
Instructions
- Place the Tortilla in a baking sheet , drizzle some oil and let it bake for 15- 20 minutes at 350 F, or until it's crispy. If you want, you can even broil it on high for 5 minutes.
- In the mean time boil the spaghetti in enough water with some salt
- In a deep pan, heat 2 tbs oil
- Add the onions and garlic and saute till the onions are little translucent
- Add the carrots, tomatoes, salt and pepper and saute for a while, till the carrots are little tender.
- Next you add the peas, chilly flakes, pour the chicken broth and cook for another 10 minutes.
- Add the cream and taste it for salt.
- Switch off the heat and add the boiled spaghetti. Then add the lemon juice and mix it properly.
- Serve it hot and sprinkle the cheese and tortilla chips on top.

Oh. My. Goodness, Kankana!! These is definitely the most different variation I've ever seen. You put a real Indian twist on it! I love your creative spirit. I think that the movie is called Tortilla Soup just related to the heritage of the family and the fact that that all come together around the table. It could have probably just as easily been called Plate of Enchiladas...but that definitely doesn't flow from your mouth the way Tortilla Soup does 😉 LOL! I'm just guessing. I'm so glad that you brought this unique version to the Quest. Thanks 😀
