Tutti Frutti Cake

Delicate crumbs embossed with tiny fruit bites, Tutti Frutti Cake is a favorite to us Indians. It’s a childhood emotion to many; an after school snack with a glass of milk! It’s an easy one-bowl recipe and makes a great teatime cake.

- tutti frutti – 9 oz
- All purpose flour - 1 cup + 2 tablepsoons
- Eggs - 3
- granulated sugar - ¾ cup
- vegetable oil - ¾ cup
- pinch of salt
- baking powder – 1 teapsoon
- baking soda – ½ teaspoon
In a small bowl add the tutti frutti and sprinkle 1 tablespoon flour. Mix it around to coat the flour to the candied fruits.
To a mixing bowl crack the eggs and add the sugar, whisk to incorporate the sugar. Pour the oil and whisk again.
Place a sifter on top of the bowl and to that add the ¾ cup flour, baking powder, baking soda and salt. Sift the dry ingredients to the bowl and whisk it to smooth consistency.
Scatter the tutti frutti and fold it to the batter.
Preheat oven to 350 F
Grease a loaf pan and dust it with 1-tablespoon flour. Rotate the pan to coat the flour all around and then discard the rest.
Pour the cake batter to the pan. Sprinkle few more tutti frutti on top (optional), and bake for 55 to 60 minutes.
Let the cake cool for 5 minutes, before you release the side and flip the cake out.
Slice and serve with tea, milk or coffee.
