Delicate crumbs embossed with tiny fruit bites, Tutti Frutti Cake is a favorite to us Indians. It’s a childhood emotion to many; an after school snack with a glass of milk! It’s an easy one-bowl recipe and makes a great teatime cake.

In India you will find tutti frutti cake in every other grocery stores and local bakeries. Crumbly soft and really delicious! However I always find the store bought cakes extremely sweet. Which is why I prefer to just whisk it up and bake at home.

    What is Tutti Frutti ?

Tutti Frutti is colourful confectionery candies fruits prepared from raw papaya. It is used very widely in India.

Where to find Tutti Frutti ?

Most Indian stores with carry small 7 oz containers. Just ask if you can’t locate. It is also quite easy to make at home, if you can manage to find the time to chop the raw papaya. Here is a link that might help.

The colorful studs in between makes it quite appealing to the kids. As a kid I remember occasionally I would pick those fruits from the cake slice making a horrible mess in the process. Yesterday I saw Avyan doing the same. He however called it gummy LOL!

How to prepare Tutti Frutti Cake ?

It’s an easy one-bowl cake batter:

    1. Coat the tutti frutti with little flour so it spread evenly in the cake and doesn’t sink at the bottom of the cake.
    2. Whisk sugar with eggs and oil.
    3. Sift all the dry ingredients – flour, salt, baking powder and baking soda to the egg mixture. Give a whisk to mix everything.
    4. Scatter the tutti frutti and fold it to the batter.
    5. Pour in a greased loaf pan.
    6. Bake at 350 F for 55 to 60 minutes.

KEY NOTE: It’s extremely important to coat the candied fruits in flour or else it will sink at the bottom of the pan.

PRO TIP: If the cake batter feels too thick, add little milk to loosen it up.

When it comes to cake, fruit cakes are my favorite, be it with fresh fruits, dried fruits or candied fruits.
