- 9 oz soba noodles (3 bundles)
- 15 oz Salmon (diced into ½-inch cubes)
- 1 small Red onion
- 2 Garlic cloves
- 2 Green onion
For the marinade and the sause for the noodle
- 1 tablespoon Soy sauce
- 1 tablespoon Sesame oil
- ½ tablespoon Mirin
- ½ tablespoon Maple Syrup
- 1 Tbsp Sesame seeds
In a bowl, combine soy sauce, mirin, sesame oil, and maple syrup plus sesame seeds. Add the salmon cubes and gently toss until coated. Let the salmon marinate for 5 minutes. Bring a pot of water to a boil and cook the soba noodles according to package instructions.Drain and rinse under cold water to remove excess starch. Set aside. Arrange the salmon pieces in a single layer in the air fryer basket.Cook at 400°F for 6 to 8 minutes or until lightly caramelized and cooked through.Cooking time may vary depending on the size of the salmon pieces and your air fryer model. Heat oil in a large skillet.Add the sliced onion, sliced garlic and cook for 1 minute or until softened. Add chopped white part of the green onion and stir. Pour the reserved marinade into the skillet and allow it to simmer for 1 minute. Add the cooked soba noodles to the skillet and toss until evenly coated with the sauce.Cook for 1 to 2 minutes to allow the noodles to absorb the flavors. Transfer the noodles to serving bowls.Top with the air-fried salmon bites.Garnish with sesame seeds and sliced green onions.Serve immediately.
