Salmon Soba Noodles

Tender air fryer salmon bites tossed with flavorful soba noodles in a sweet and savory soy maple sauce. This easy 15-minute dinner is healthy, high protein, and perfect for busy weeknights.

Ingredients
 

  • 9 oz soba noodles (3 bundles)
  • 15 oz Salmon (diced into ½-inch cubes)
  • 1 small Red onion
  • 2 Garlic cloves
  • 2 Green onion

For the marinade and the sause for the noodle

  • 1 tablespoon Soy sauce
  • 1 tablespoon Sesame oil
  • ½ tablespoon Mirin
  • ½ tablespoon Maple Syrup
  • 1 Tbsp Sesame seeds

Instructions
 

  • In a bowl, combine soy sauce, mirin, sesame oil, and maple syrup plus sesame seeds.
    Add the salmon cubes and gently toss until coated. Let the salmon marinate for 5 minutes.
  • Bring a pot of water to a boil and cook the soba noodles according to package instructions.
    Drain and rinse under cold water to remove excess starch. Set aside.
  • Arrange the salmon pieces in a single layer in the air fryer basket.
    Cook at 400°F for 6 to 8 minutes or until lightly caramelized and cooked through.
    Cooking time may vary depending on the size of the salmon pieces and your air fryer model.
  • Heat oil in a large skillet.
    Add the sliced onion, sliced garlic and cook for 1 minute or until softened.
    Add chopped white part of the green onion and stir.
    Pour the reserved marinade into the skillet and allow it to simmer for 1 minute.
  • Add the cooked soba noodles to the skillet and toss until evenly coated with the sauce.
    Cook for 1 to 2 minutes to allow the noodles to absorb the flavors.
  • Transfer the noodles to serving bowls.
    Top with the air-fried salmon bites.
    Garnish with sesame seeds and sliced green onions.
    Serve immediately.
