- Heavy Cream - 1 cup
- Sugar - ½ cup
- Egg Yolk - 4
- 1 tablespoon butter
- tiny pinch of salt
In a heavy bottom pan, add the sugar and milk. Give it a stir and cook it in medium low heat for 3 minutes stirring constantly. We are just dissolving the sugar here.
Pour the egg yolk while whisking the cream and continue to simmer and whisk for 5 minutes. Or until the consistency thickens and coats the back of the spoon.
Take it off the pan and add the salt along with butter. Whisk to incorporate the butter.
Strain the custard and place a clear wrap directly on top of the custard (this step will make sure no milk skin is formed on the custard as it cools in the refrigerator). Place in the refrigerator and enjoy withing the next 3 to 4 days.
The custard will thicken a tad bit as it sits in the fridge.
