Pan con tomate
Pan con tomate—also known as pa amb tomàquet in Catalonia—is one of Spain’s simplest and most satisfying dishes. At its heart, it is nothing more than toasted bread rubbed with ripe tomato, finished with extra-virgin olive oil and a pinch of salt.

- 4 thick slices of rustic bread
- 1 large heirloom tomato
- 1 Garlic clove
- 1 tablespoon Good quality extra virgin olive oil
- seasalt to taste
- Finely chopped fresh herb (optional)
Grate the tomato over a bowl and then strain it to remove excess moisture
While that happens, toast the bread until crisp and lightly charred.
To the strained grated tomato, add olive oil, salt and herbs if using.
Rub fresh garlic on the toasted bread and spoon the tomato.
Add more herbs or little drizzle of olive oil and enjoy right away!
