Egg And Cucumber Sandwich
Egg And Cucumber sandwich but with sour cream instead of mayo! It is a refreshing sandwich with the crunch of lettuce in between and creamy avocado. This sandwich is my summer go to meal, especially on hot days.

- 3 eggs
- 1 Small cucumber
- 2 tablespoon Sour cream
- 1 avocado
- 4 Lettuce leaves
- Salt as per taste
- 1 teaspoon Freshly cracked black pepper
Hard boil the eggs, peel once cold and then place in a mixing bowl. Using a fork, smash into rough chunks.
Grate the cucumber using the big hole of the grating box. Once done, place in the same mixing bowl.
Peel the avocado, discard the seeds and add that too in the mixing bowl.
Add sour cream, salt, pepper and give a mix. Make sure to taste for salt.
Slice the edges of the sandwich bread (optional), then layer a couple slices of lettuce. Top it with a couple spoons of the sandwich mixture and top it with another slice of bread.
Based on your liking, slice the sandwich into half, diagonal or into small 4 bites.
Enjoy right away.
