Ingredients

  • 1 and ½ stick softened (not melted unsalted butter)
  • ¾ cup white granulated sugar
  • 1 egg kept at room temperature
  • 2 tablespoons orange zest
  • 1 and ½ cup all purpose flour
  • ½ cup cocoa powder
  • 1 teaspoon baking powder
  • pinch of salt

Instructions

  • In a mixing bowl, whisk the butter with sugar.
  • Sprinkle salt, orange zest and 1 egg. Whisk to mix.
  • In a bowl add the flour, cocoa powder and baking powder. Whisk to mix.
  • Sift the dry ingredient to the butter and using a rubber spatula mix it to form a dough. Do not over mix or knead.
  • Wrap the dough in a clear wrap and place in the fridge to chill the dough for 2 hours.
  • When rolling the dough, dust a little cocoa powder and then roll the dough using gentle pressure. Roll it to ¼ inch thick.
  • Using the cookie cutter, cut out the dough into multiple shapes and place in a cookie sheet. Place the cookie sheet back in the fridge while you preheat the oven.
  • Preheat the oven to 350 F and bake the cookies, placing the sheet in the middle rack for 10 minutes.
  • Once done, take the cookie sheet out and let the cookies cool down in the hot cookie sheet for 2 minutes.
  • Then remove the cookies from the sheet to the wire rack to cool it down completely.

Notes

Things to remember when making these cookies:

You need to have room temperature softened butter and not melted butter.
When you mix the ingredients, do not over mix or knead the dough. Either use a rubber spatula to mix or paddle attachment if using a stand mixer.
When you are rolling the dough, instead of dusting with flour, dust with cocoa powder. And let the dough rest in the fridge for 2 hours. The dough needs to be cold when rolled out.
While rolling the dough and cutting, if the dough gets sticky or warm, place it back in the fridge.
