Badam Doodh literary translates to Almond Milk! But unlike almond milk this famous Indian drink is prepared by slow simmering dairy milk with almond paste, cardamoms and saffron. It’s creamy luscious that can be enjoyed warm during winter months and cold during summer days.

- 2 cups dairy milk
- ¼ cup whole almond
- ¼ teaspoon cardamom powder
- tiny pinch of saffron
- 2 tablespoons sugar
Soak the almond in warm water for 10 minutes. Then peel the skin off and blend it with a tablespoon of water to form almond paste.
In a heavy bottom pan pour the milk and let it simmer in medium heat for 10 minutes. Keep stirring occasionally to avoid the milk from getting burnt at the bottom of the pan.
Add the almond paste, cardamom powder, sugar and saffron. Stir around and continue simmering for 5 minutes.
Taste for sweetness and add more if you want.
Serve it warm garnished with sliced almond or let it refrigerate and serve it cold.
