Kaju Katli, also sometimes referred as Kaju Barfi, is one of the most favorite Indian sweets. It’s fudgy, rich and melts in the mouth. Kaju refers to cashew and Katli refers to thin slices. It is also a popular festive treat, especially on Diwali. As a kid, I didn’t have a sweet tooth and there were probably few sweets that I would really enjoy. Kaju Katli was definitely one of them. This thinly sliced cashew fudge is gluten free and needs only 3 ingredients!

Sabudana Vada is a very popular Maharashtrian snack that is prepared with very basic 5 ingredients. It’s crunchy on the outside while being very soft and airy inside. Also referred to as Subadana Tikki, this popular teatime snack is vegetarian and is enjoyed a lot during Navratri festival. While these fritters are most commonly enjoyed deep-fried, it is equally tasty when you bake it. There are a few tricks involved in making Sabudana Vada with a perfect texture and I have mentioned everything in detail.
This is my take on the traditional Sabudana Vada. These sabudana vada with methi are crunchy on the outside and puffy inside. It has the goodness of fresh fenugreek leaves which gives a lovely aroma. It is the perfect Vegetarian snack and is very common during Navratri Celebration. Don't forget to pair it with a cup of Masala Chai!
