As I was glancing through Chef Todiwala’s Spice Box cookbook, this recipe of potato, nut and paneer croquettes in spinach sauce caught my eye. It looked so good that I had to add that to my list. Now, I am not very good at following recipes to the point, so I gave my own little changes and made this Chenna Kaju Palak (Fresh Cheese Dumplings In Cashew And Spinach). The cheese dumplings were pillowy and the soft cashew and spinach sauce is a keeper.
When your daily routine revolves around cooking every single day, be it for a job or to feed your family, there comes a day in the week when you need a break from the mundane. I go through this phase at least once every week, mostly on Fridays. That day, my bones get lazier than ever. Other than cooking for Avyan, all I do in the kitchen is prepare an easy egg sandwich for lunch. As for the dinner, either Arvind puts on his chef hat or we order take out.
My favorite season is finally here with longer daylight, beautiful sunshine and pretty flowers! Now, all I ask from the weatherman is not to predict anymore frequent showers, storm or anything that takes away the Spring. Last week was pretty dull and boring with non-stop rain and cold winds, but what kept me excited was seeing Arvind finalizing the new design for blog. In between all the crazy workload, my sweetheart somehow managed to find time for planning, writing, fixing bugs and creating this new look. I feel SO proud and yes, I know :) I am one lucky girl!
