Macher Jhol Aloo Begun Diye

A very light Bengali fish curry, that doesn’t call for onion or tomato. Just potato, eggplant and few mild spices is all it needs to prepare this Macher Jhol Aloo Begun Diye. Macher Jhol translates to fish curry, aloo means potato and Begun is eggplant. This simple light variety of Bengali fish curry is one of my absolute favorite. We also add dried lentil dumplings (daler bodi) which brings an earthy flavor to the dish. Paired with rice, it’s a great summertime meal.

In India, not many people are used to eating pork or beef but if you grow up in Shillong, it's tough to ignore it. One of the most popular dishes in Shillong is 'Jadoh' - a pork and rice dish found in every corner of the street. Few months back, my friend Madhu opened a group in Facebook called 'Pork-Lover' and asked me if I could cook something special for the group. Well, why not! what are friends for :) I have always enjoyed this red meat and decided to try Pork Vindaloo.

Crunchy potato fritters topped with chickpea stew, bathed with the famous trio of red and green chutney along with tangy yogurt, topped with raw onions, cilantro and tiny strands of fried chickpea flour batter called sev! And to give that final smack, a pinch of chaat masala is sprinkled at the end. With so many things going on in one plate, Aloo Tikki Chaat should clearly fall under meal category and just not snacks!
