At first, I want to thank you all so much for showering your wishes and showing your love in my last post. It means a lot! Now, if you are looking for a last-minute Christmas gift, this savory nuts and seeds crackers could be a good choice. It’s so easy to bake. Even if you are not much of a baker, you can easily pull it through. It’s crispy and so dunk-able in a cup of tea, coffee or hot chocolate. You can go creative with the ingredients. Add your choice of nuts, may be some dried fruits or perhaps, some fresh herbs. It’s wholesome and really tasty!
I often like my morning tea with something savory, preferably rusk. My two girlfriends, Prerna and Vijitha, share the same ritual with their morning tea. So, when we gathered for the Christmas party, I figured that these crackers would be perfect gift for those lovelies. We, food enthusiastic people, always appreciate edible gifts, both giving and receiving.
However, I was not sure if giving simple savory crackers would be the right choice because we all love sugar and spice during this time of the year. But then, they both enjoyed the crackers so much, they even asked for the recipe or bake them a ginormous batch, if possible.
These crackers are the healthy type. It has a mix of white and whole wheat flour, ground flax, chia seeds with assorted nuts and fennel seeds. Plus, it has no oil or butter. The baking procedure is similar to biscotti (twice baked crackers). So, there has to be some wait time for the cake to cool down before you can thinly slice and bake again. The slicing part is critical as keeping those slices thin and uniform is the key. If you prefer these crackers not so thinly sliced then you have to increasing the second baking time. I just loved it super thin and crunchy.
Nuts and Seeds Crackers
Ingredients
- ¼ cup whole wheat flour
- ½ cup all-purpose flour
- ¼ cup ground flax
- 1 teaspoon baking soda
- 1 teaspoon sugar
- 1 tablespoon fennel seeds
- 1 tablespoons chia seeds
- ¼ cup almond
- ¼ cup walnut
- ½ cup thick yogurt
- ¼ cup water
- 1½ tablespoon dark molasses/maple syrup/honey
Instructions
- Preheat the oven to 350 F. Grease a loaf pan with oil or non-stick cooking spray.
- In a mixing bowl, add the first six ingredients plus half of the chia seeds and give it a whisk.
- Pour the yogurt, water, dark molasses and whisk. It will turn into a sticky dough.
- Finally, mix the nuts to the dough.
- Put the dough into the loaf pan and level the top using the back of a spoon. Sprinkle rest of the chia seeds on top.
- Bake for 35 minutes or until the top of the cake feels firm.
- Let the cake cool down completely to room temperature and then, wrap the cake in clear wrap and keep it in the refrigerator for a couple of hours. You can also do this step in-advance and let the cake freeze for a few days until you are ready to make the crackers.
- To prepare the crispy crackers, preheat the oven to 400F.
- Using a serrated knife, slice the bread to ⅛ inch slices. Layer the slices on a cookie sheet. Bake for 10 minutes on one side, then flip and bake for 10 more minutes. Or until it feels crisp and the color changes to golden brown.
- Cool the crackers completely before storing in an airtight jar.
