A new week, a new meal plan, more to-do(s) to check but it all starts with breakfast muffins and tea. After a fun filled weekend, Monday mornings comes as a struggle to me. Especially, ever since Avyan started school. Although I get the entire day to myself to finish all my work in peace, the mornings are crazy. Preparing and packing lunch boxes for my boys, fixing a quick breakfast for us, waking Avyan from his snoring zone and getting him ready for school. The two hours feel really short. In between all this, my stomach growls continuously! Arvind makes masala chai for us and we sit down for a few minutes to discuss the day while enjoying on these light Banana, Granola and Toasted Walnut Breakfast Muffins. A good way to fill the belly!
I love how these muffins turned out. I have added plain rolled oats in muffins and cakes several times but granola was a much better decision. It added a lovely crunch and extra sweetness. The idea to add toasted walnuts came in at the last moment. I normally pack a few walnuts in Avyan’s lunch box. He never showed any disinterest in nuts, so I thought why not toast the nuts with some honey. I assumed he would love it much more than the plain ones. Well, nope! So, the entire batch of honey roasted walnuts was lying around and there is only so much we could munch.
The recipe is fairly simple and you could play around with it. Add your version of granola, substitute walnut with your favorite nuts or no nuts. The recipe doesn’t call for any special gadgets, not even a whisk and it requires no sifting of ingredients. Just drop everything and mix to form a smooth batter. A perfect pick me up treat for breakfast, teatime or after school snack.
Here is a quick video to show you easy it is.

- Top it with some more granola and toasted walnuts.
