Fresh and easy warm pasta salad with Roasted cherry tomatoes and Eggplant. A great light pasta dish, perfect for the warm days coming ahead. You can serve this Roasted Tomato and Eggplant Pasta Salad as a side dish with some grilled meat on the side or garlic bread. I enjoyed it just as is with extra Parmesan cheese on top.

As some of you might know from my Insta-stories, I am on a vacation right now! We are on a much-needed fun and relaxing break. We don’t have any major plans except for eating a ton of food, relaxing and strolling around the streets! So, during this time, I will have some of my amazing friends sharing their recipes with you. I am starting it with this delicious Creamy Butter Garlic Shrimp Pasta by Richa from My Food Story. We can never have enough pasta and I am always looking for easy pasta recipes that can be whipped up quickly…
Did you guys read my story about Pasta? Since that day, I just haven't been able to stop eating Pasta. I have tried it already in Soup, Sandwich and now in Pasta Muffins! What can I say!! I am an Indian who is madly in love with Italian food and sometimes, I secretly wish that I was an Italian ... hush hush!!! The Italian language is super sexy and the way they move their hands when they talk. I especially love the fact that cheese and wine are the major part of their every day meal. Well, it's not like…
I clearly remember when I started eating Pasta, it was not that long ago, I guess 4 years !! So, it was one such evening when I had called Arvind for dinner; he was my BF then, and wanted to make something special and different ( you know the common saying ' the way to Man's heart is through his stomach' ) I think I wanted to implement that ;) That's when I had made my first Pasta attempt , searched all over the net for something that looked simple and easy. If you know me, you will also know…
This time of the year is meant for vibrant seasonal produces being tossed and tumbled in a plate. It’s always appealing! Broccoli, peas, pasta chucked together in a luscious garlic caper sauce. And some juicy cherry tomatoes for that extra pop of color plus a hint of sweetness. I like to call it Green Summer Pasta!
How are you guys enjoying your Spring? Doesn't it feel nice to wake up on a bright, beautiful sunny morning. It's so nice to see all the colorful flowers blooming everywhere, making the world look colorful and fresh. I was getting very tired of the cold weather, rainy gloomy days and those jackets! It's time for summer outfits, shorts and flip flops.. aah! It makes me SO happy :) I am really blessed that I did not have to stay in places with extreme weather. In India, I was staying in Bangalore, where the weather is pretty much steady through…
We all hate Monday mornings.. right? It's the day after Sunday, back to normal schedule, wake up early, meetings at work, deadlines to meet.. huh! i am not on that road anymore, but I remember how I used to bang my head in the pillow to wake up every Monday morning. Back in Bangalore, one of my best friend from work was my neighbor and we used to travel to work together, gossiping all the way... it was a fun but most Monday mornings, we had to motivate each other a lot :D This Monday morning was fun for me…
A visit to the farmer’s market is inspiring, uplifting and one of the finest ways to start a morning. There is a local one, not too far from our home, that brings lovely spread of seasonal produce every week. On certain Fridays, I worry less about morning cleaning or prepping lunch and instead, I make a trip to the market. I walk pass the stalls at a slow pace, taking time to explore. There are huge bunches of vibrant greens, purple cauliflowers, baby artichokes and tender asparagus all screaming spring. And there in the corner, I see colorful spring carrots…
Chicken Bolognese Baked Ziti is crowd pleaser, both with kids and adults. Because it is so easy to freeze and bake in bulk, it is perfect for big parties too. You can make the dish vegetarian by adding finely chopped mushroom or tofu instead of chicken. You could also add bite size cauliflower or broccoli and make it vegetable loaded. This Baked Pasta with Chicken Bolognese is a favorite in my home and probably the only pasta dish I like that is covered in tomato sauce.
Homemade Ravioli stuffed with shrimp, cooked to perfection and topped with favourite basil pesto sauce. This is dish for people who love pasta and seafood. Making homemade pasta is a lot of work but it is also fun, especially if you are making for a special occasion. Arvind loves pasta, well we both do. And since we were staying at home, we decided to try home made shrimp ravioli. So glad we did, because this Shrimp stuffed ravioli with pesto sauce is delicious!!
