Fish Fried with Crispy Plantain

For the past few days, it’s been warm, sunny and no rain πŸ™‚ I bet everybody in this part of the world is wondering where’s the winter gone ? Most of my friends love the winter, it’s cold, cozy and not sweaty. However, I can’t wait for spring and summer. I can have more lemonades, wear summer clothes, go out for walk and enjoy cocktails even on weekdays πŸ™‚

Fish is one of my favorite non-vegetarian dish. I like them fried, smoked, grilled, in curry, without curry, you got the message! πŸ˜€ So, why did I jump from warm weather to cocktail to fish ? Because, today I am sharing with you a spicy fish fry which goes perfectly with cocktails or even without cocktails! This dish is not entirely my idea. My very good friend Deepa shared her fish fry recipe with me and I gave my own twist to it. To the fish fry, I also added some fried crispy plantain and the combination was amazing!

Egg Bowl

If I have to select my favorite meal, I would definitely select Breakfast. It’s my all time favorite, some eggs.. some bread.. some fruits.. aaahh, perfect! I enjoy it more on weekends as you can take your time to enjoy every bite of the crispy bread or that yummy cheesy omelet. You can even sip your coffee more slowly, like you have all the time in the world.

Every weekend Arvind tries to help me in making breakfast. He always throws in some interesting ideas .. some are approved .. some are rejected .. and some (I would just have this blank look!) . I haven’t shared many breakfast recipes in my blog, that could be because we were too hungry to either take a picture or we were not sure how it would work out. πŸ™‚

Last weekend I made this breakfast, which we absolutely loved and thankfully, we had the patience to click some pics too. I used to make something similar in small sauce pan, but this time I used Ramekin. It’s quick, easy and you got to try it! I don’t even know what’s it called? I searched in the net, couldn’t find anything.. so I am calling it ‘Egg Bowl’

Shrimp stuffed Ravioli with Pesto Sauce

If you have read my last post, you will know that 5th Feb was my Husband’s birthday and since we were spending the day at home, I decided to make him some of his favorites. We had the White Chocolate Cake for the ‘Midnight Wish’ and for breakfast, we had these amazing cheese and jalapeno crust bagels with scramble egg. It was so yummy. We got this bagel from Safeway, and if you haven’t tried it yet, you should!

We both have a huge list of favorite dishes. So figuring out what to cook for his Birthday lunch was quite a task for me and hence, I asked him. He instantly answered: Ravioli. Hmmm .. I like that too, but I had never made Ravioli. I always used to buy them frozen and make some sauce at home. And then he said, let’s make it from scratch, with a stuffing of our choice. I was zapped! Making ravioli from scratch.. never thought of that and we don’t have a pasta sheet maker, or whatever those are called!

So, after doing my research on ‘how to make ravioli’, I was all set to make our lunch. For back up, I had few frozen foods in the refrigerator and pizza delivery on my speed dial. For stuffing, I used Shrimp and Portobello mushroom and made a basil pesto sauce, which is one of our favorite pasta sauce. It was not an easy job to make the raviolis, especially when you make them in the traditional Grand Ma fashion by using a rolling pin. But when Arvind enjoyed every bite of it and finished the plate with a smile, it was all worth the effort πŸ™‚

White Chocolate Cake

Yesterday was Arvind’s birthday and we wanted to celebrate it at home, just us πŸ™‚ So, I decided to treat him with some of his favorites. Everyone needs to make the ‘midnight wish’ and he love white chocolate anytime.. So, I thought of making a white chocolate cake. I wanted to bake the cake in advance to surprise him at midnight and that kept my Friday evening very busy.

Birthday cake should be decorated and fancy, with neat icing, but I had no idea on how to do that. I took a risk and it was a disaster πŸ™ I thought of covering the cake with whipped cream and melted white chocolate, and write with milk chocolate on the top. So, I baked the cake, and once it was cold enough (which I thought was enough!!), I spread the whipped cream and started writing on it. It was looking awesome πŸ™‚ Then, the door bell rang. Arvind came home early .. OH NO !! I couldn’t have done anything to hide the cake in time and I left kitchen for a minute, but guess what happened? I came back and saw the cake. All of the writing on top of the cake had melted and it gave an abstract design to it … aaaaaaaaaaa .. wanted to scream and cry!!!

Arvind was so excited to see the cake. He thought the design was fun and when I told him he said ‘aawwhh.. let’s go and buy the ready made icing bottle and you can design on top of the cake’ How sweet is he! I was so mad at me for not letting the cake to cool down enough. So, the final icing was from the bottle… Why didn’t I think of it before? Anyways, the cake was awesome and my Man was super happy πŸ™‚

Spice coated Kundru/Ivy Gourd

I can’t believe it’s already Friday! This week just flew by. Was I that busy? Why even worry, after all it’s almost weekend. And it’s not just any weekend, it’s Arvind’s Birthday tomorrow πŸ™‚ πŸ™‚

Initially I was planning to throw a party, but my Man wants a quiet time just with me (blush blush!!) πŸ˜‰ Ok, quiet time, which means we are eating at home, which mean I need to cook some of his favorites. I still can’t figure out what to cook, I just know what I am baking. Have tons of dishes going through my mind, so many favorites from my blogger friends! HUH!! Well, I have stored some of his favorite packed food in the refrigerator too.. you know, just in case !! To start with, I have to at least finish baking the cake.

Ok guys, I am going straight to my today’s recipe. Again, this is one of my 5 ingredients recipe. It doesn’t take any prep time and very minimal cooking time. This dish can be enjoyed as an appetizer or even as a side. This particular vegetable is called Kundru in Hindi and Ivy Gourd in English. It is a tiny little green color vegetable which grows aggressively on vines. I think it’s also called Tindora.. so many names!!
