Stuffed Bell Peppers with Potatoes

Now this may come to some of you as a surprise .. Bell Peppers are actually fruit ! There are variety of colors and various ways of eating them .. you can even try them raw specially the yellow or the red ones. Stuffed Bell Pepper is a common dish used with a variety of stuffing. The main thing to concentrate on is the baking time and the temperature. So lets get startedย ๐Ÿ™‚

Stuffed Bell Pepper with Potatoes


  • 7 bell peppers
  • 2 medium boiled potatoes
  • 1 medium grated onion
  • 1 green chilly
  • 1 clove garlic
  • 1 tbs cumin powder
  • 1 tbs chilly powder
  • 1/2 cup lemon juice
  • 1-1/2 cup bread crumbs
  • olive oil
  • salt and pepper to taste


  • Clean the bell peppers, and remove the seeds, and cut a thin slice from the bottom to make them sit properly.
  • Boil the potatoes with little salt.
  • In a pan heat some oil and saute the grated onion with finely chopped garlic till they are little brown in color.
  • Add the boiled potatoes, chopped green chilly, chilly powder, cumin powder. (If you don't want it too spicy you can avoid the chilly powder)
  • Saute it and in the process mash the potatoes .
  • Add some salt and pepper and cook for 5 mins more.
  • Stuff the bell pepper with the mixture and pour some bread crumbs on top of each bell pepper.
  • Drizzle them with little oil on top.
  • Put them in a baking dish and add some water in the dish which will help them to steam properly.
  • Let it bake in 400 F for about 55 to 60 minutes.
  • Serve it hot !!
