I remember the time in high school when Valentine’s Day was always the biggest celebration. Red was the color of the whole week just not the day. We would buy greeting cards in advance and sometimes to add a personal touch, we would make red roses with ribbons and stick it on the card. It sounds a little silly to me now but I smile as I think of those golden days, when life was simple with hardly any responsibilities to take care or worries to deal with.


Time is so different now with a to-do list that never seams to get blank and work responsibilities that at times make us crazy. But on certain days, it’s good to take a break and live life a little more with the person you love the most. I don’t think we need a specific day to celebrate love but when we have one than why let it go waste. Make it special in whichever way you can, small or big! Go for a hike together and carry a picnic basket along with you, watch a movie cuddling in the couch with a big basket of popcorn or cook a meal together.

Arvind enjoys cooking and on certain special weekends, he would fold his sleeves and help me in the kitchen. I prepare the breakfast while he makes the tea and sometimes we switch. I allow him to make a mess and for the moment care less about my obsessive compulsive nature. These are precious seconds and nothing makes me happier than being around him. And as we wait for the food to get ready, we put on some music and dance in our tiny kitchen. I am blessed. I love this life. I love us!

Baked egg with toast is one of our favorite weekend breakfasts; it’s easy, always effortless and so quick! There is no limit to what you can add along with the eggs. Pick your favorite greens or veggie, add some potatoes, if you want it more filling. Either way, it’s always so comforting.

When berries are in season we indulge a little more and end our breakfast with some fresh strawberry over ice cream for him and over whipped cream for me. It’s a quick and easy way to sweeten the taste bud after the hearty breakfast.

Baked Eggs With Spinach

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Serving Size: Serves 2

Baked Eggs With Spinach


  • 4 eggs
  • Couple handful of fresh spinach, roughly chopped
  • 1 medium onion, thinly sliced
  • 1 garlic cloves, grated
  • 1 teaspoon chili flakes
  • 1 tablespoon dried oregano ( or any other herb of your choice)
  • ½ cup grated pepper jack cheese( or any other of your choice)
  • ½ cup heavy cream
  • salt
  • pepper
  • oil


  • Preheat the oven to 375F
  • In a pan heat some oil and sauté the garlic with onion until it’s translucent. Season with salt and pepper
  • Add the spinach and cook for about two minutes.
  • Pour the cooked onion and spinach in two individual oven safe containers.
  • Add little bit of cheese on top followed by little bit of chili flakes and dried oregano
  • Now, very carefully crack two eggs in each of the container ( or one, depending on how small or big your oven save container is)
  • Next, pour the heavy cream, add the remaining cheese and add some freshly cracked peppers top.
  • Baked it for about 20 minutes or until the egg is cooked.
  • Serve immediately with some toasted bread.
  • Please note the cooking time will differ from oven to oven. My husband likes well-cooked eggs but if you prefer medium cooked eggs, yours should be done by 15 minutes.

I was searching for healthy breakfasts on Pinterest – just to shake up my morning routine and this will do the trick! Your photos are beautiful!
